How to make pancakes with cottage cheese:

I prepare the batter. In a bowl I beat 2 eggs. I add sugar and salt. Pour 250 ml of warm milk and stir with a whisk. I add 180 grams of flour, stir it to make sure there are no lumps. I pour another 250 ml of milk and stir again. The dough is liquid and you want to add more flour, but you do not need to. I leave the dough for 15 minutes.

Before baking the pancakes, I add 2 tablespoons of vegetable oil to the batter. I stir it so that the oil is well distributed in the batter.

I heat a frying pan and oil it only before baking the first pancake.

The diameter of my frying pan is 20 cm. I get 16-18 pancakes. They are thin and do not tear.

The cottage cheese filling. In 400 grams of cottage cheese, add 3 or 4 tablespoons of sugar (to taste), a pinch of salt and 2-4 tablespoons of sour cream 20%. The amount of sour cream depends on the moisture content of the cottage cheese. If desired, you can add raisins. Stir the filling.

On a cooled pancake I put 1 tbsp of cottage cheese (filling) and wrap an envelope.

It is very delicious if you fry the pancakes in butter or melted butter.
