Pour cream into a bowl, add sugar and beat with a mixer. Separate whites from yolks. In another bowl, mix the yolks with mascarpone, beat the whites separately, move everything and add the whipped early cream.
Pour hot coffee and cognac into a bowl. Mix everything. Dip the biscuits so that they are soaked in coffee.
On a dish, lay out a layer of biscuits soaked in coffee, then a layer of cream, again a layer of biscuits and a layer of cream. Sprinkle cocoa powder on top. Keep in refrigerator until serving.
1 pack of dry biscuit cookies (Savoyardi, Ladyfingers) 250g
4 fresh eggs
500g mascarpone
250g sugar
200g whipping cream
a cup of coffee (medium strength)
20g cognac
100g cocoa powder
