Wash the spinach and dry. Wash the strawberries and cut them into halves. Roughly chop the nuts. Combine spinach, strawberries and nuts in a large bowl. For the dressing, combine olive oil, balsamic vinegar, salt and pepper. Dress the salad before serving.
2. Rice with green peas and mint
This light and refreshing dish is perfect for a spring lunch. You will need:
Rice - 1 glass
Green peas (fresh or frozen) - 100 g
Fresh mint - 2 tbsp. spoons
Lemon juice - 2 tbsp. spoons
Olive oil - 2 tbsp. spoons
Salt, pepper - to taste
Boil the rice until done. Add green peas and cook for another 5 minutes. Drain off excess water, if any. Add mint leaves, lemon juice, olive oil, salt and pepper. Mix thoroughly and serve.
3. Potato pancakes with onions and herbs
These pancakes are ideal as a side dish for meat or fish dishes. You will need:
Potatoes - 4 pcs.
Green onion - 3 pcs
Dill and parsley leaves - 2 tbsp. spoons
Egg - 1 pc.
Salt, pepper - to taste
Vegetable oil for frying
Peel the potatoes, grate them on a fine grater, and squeeze out the excess liquid. Finely chop the onion and greens. Mix potatoes, onion, herbs, egg, salt and pepper. Form pancakes and fry in a frying pan until golden brown on both sides.
