My favorite summer dish is okroshka

Okroshka is a cold soup dish popular in summer time. To make okroshka you will need the following ingredients: boiled meat or sausage, boiled potatoes, fresh cucumbers, radishes, green onions, dill, parsley, boiled eggs, kvass or kefir, salt and sour cream.
Prepare all the ingredients: boil potatoes and eggs, cool and peel them. Cut meat or sausage, potatoes, cucumbers and radishes into small cubes.

Chop the green onions and herbs finely. Put all the chopped ingredients into a large bowl and mix together.

In a separate bowl mix kvass or kefir with sour cream, add salt to taste. The classic recipe uses kvass, but you can replace it with kefir or a mixture of water and lemon juice.

Pour the prepared liquid over the mixture of vegetables and meat. Mix thoroughly.

Put the okroshka in the fridge for an hour or two so that it cools down well and infuses.

Serve the okroshka cold, garnished with greens and a slice of fresh cucumber.

This refreshing soup will perfectly quench your thirst and satiate you on a hot summer day. Experiment with the ingredients to your liking, adding, for example, a little mustard or horseradish to spice things up.
