My cherry pie recipe

Ingredients:
For the dough:
- 2 cups of flour
- 200 g of butter (cold, cut into cubes)
- 1/2 cup of sugar
- 1/4 teaspoon of salt
- 1 egg
- 2 tablespoons of cold water
For the filling:
- 500 g of cherries (fresh or frozen, pitted)
- 3/4 cup of sugar (more or less is possible, depending on the sweetness of the cherries)
- 2 tablespoons of starch (corn or potato)
- 1 tablespoon of lemon juice
- 1 teaspoon of vanilla extract (optional)
Preparation:
**Dough preparation:**
- Mix flour, sugar and salt in a bowl.
- Add the cold butter and grind it with the flour until the mixture resembles crumbs.
- Add the egg and cold water, knead the dough until it becomes uniform.
- Shape the dough into a ball, wrap it in cling film and chill it in the fridge for 30 minutes.
**Preparation of the filling:**
- Mix cherries with sugar, starch, lemon juice and vanilla extract. If using frozen cherries, let them thaw first and drain off excess liquid.
**Assembly of the pie:**
- Preheat the oven to 180°C.
- Divide the dough into two parts: larger and smaller.
- Roll out most of the dough and place it in the pie dish, lifting the edges. Prick the dough with a fork in several places.
- Put the cherry filling on the dough.
- Roll out the rest of the dough and cover the filling with it, or make a grid. Press the edges of the dough together to secure.
- Make several cuts on the top layer of the dough to allow steam to escape.
- Bake the pie in the preheated oven for about 45-50 minutes, until the crust is golden and the filling is bubbly.

- **Black tea** with a light aroma of bergamot (for example, Earl Grey) will perfectly emphasize the rich taste of cherries.
