Take, for example, the Christmas Eve dinner, or Sviata Vecheria. This meal consists of 12 meatless dishes, symbolizing the 12 apostles, and is entirely vegetarian to honor the fasting period before Christmas. The table is set with care, often with a layer of hay under the tablecloth to symbolize the humble birthplace of Jesus.
