In Poltava region, they always cook a lot so that there's enough for everyone - both those who come and those who are remembered. We start with borscht - red, on pork broth, always with lard and garlic. Then comes baked pork, homemade sausage, and jellied meat.
Mom prepares fish in jellied form - a tradition from her great-grandmother. Salads are a must: vinaigrette, "olive", beets with horseradish. Easter egg stands in the center of the table - as a symbol of life. Around it are Easter eggs, butter in the shape of a flower, cookies like "nests".
Salt in an embroidered napkin is like a talisman. And also a glass of viburnum liqueur. Not for drinking, but for tradition.
We always pray before eating. We thank you for everything and remember those who are no longer with us. This is not just a meal - it is a holiday of the soul.
