However, the modern macaroons that we know and love were created in Paris at the beginning of the 20th century by the Ladurée confectionery company. Macaroon recipe
Ingredients:
1 cup almond flour
1 3/4 cups powdered sugar
1 cup egg whites (about 3-4 egg whites)
1/4 cup sugar
Food coloring (optional)
Filling: ganache, jam or cream
Instructions:
Preparation of ingredients:
Sift the almond flour and powdered sugar together into a bowl.
Beat the egg whites until soft peaks form, then gradually add the sugar and continue to beat until glossy peaks form.
Mixing ingredients:
Carefully add the dry ingredients to the egg whites, stirring gently with a spatula.
Add food coloring if you want colored macaroons.
Formation of macaroons:
Transfer the mixture to a pastry bag with a round tip.
On parchment paper lined on a baking sheet, squeeze out circles about 1 inch in diameter.
Let the macaroons stand at room temperature for about 30 minutes to form a crust.
Bakery products:
Preheat the oven to 150°C.
Bake the macaroons for 15-18 minutes, until they become firm.
Allow them to cool completely before removing them from the paper.
Assembling:
Brush the flat side of one macaroon with the filling and combine with the other macaroon to make a "sandwich".
