Cannoli is a traditional Sicilian dessert that has a rich history and cultural significance. Cannoli's history dates back to the days of Arab rule in Sicily, where they are believed to have been inspired by Arabic sweets. The name "cannoli" comes from the Sicilian word "cannolu", which means "small tube", and refers to the shape of the dessert.

Cannoli are traditionally prepared during carnival, but today they can be found in pastry shops and cafes all over Italy all year round. They have become a symbol of Sicilian cuisine and a favorite delicacy for many.

Cannoli Recipe
Ingredients:
For the shell:

2 cups flour
2 tablespoons sugar
2 tablespoons butter, cooled and diced
1 egg
1 egg white
1/2 cup white wine
A pinch of salt
Vegetable oil for frying
For the filling:

2 cups ricotta
3/4 cup powdered sugar
1/2 teaspoon vanilla extract
1/2 cup finely chopped candied fruits or chocolate chips
Powdered sugar for decoration
Instructions:
Preparation of the dough for the shell:

In a bowl, mix flour, sugar and salt.
Add the butter and mix until crumbs form.
Add the egg, egg white and wine, knead the dough until smooth.
Wrap the dough in foil and let it rest in the refrigerator for 30 minutes.
Formation and frying of shells:

Roll out the dough very thinly and cut into circles about 10 cm in diameter.
Wrap each circle of dough around a cannoli pan (or metal tube) and secure the edges with egg white.
Heat the vegetable oil in a deep frying pan and fry the shells until golden brown.
Remove the shells from the molds and let them cool on a paper towel.
Preparation of the filling:

In a bowl, mix the ricotta, powdered sugar and vanilla extract until smooth.
Add candied fruits or chocolate chips and mix.
Cannoli Assembly:

Fill the shells with the ricotta filling using a pastry bag or spoon.
Sprinkle the edges of the cannoli with powdered sugar before serving.
