I don’t usually bake. I have no culinary talent, I didn’t watch videos with instructions, and I didn’t remember how many grams of something you need. But one day… yes, it sounds like the beginning of a fairy tale, but it was just a tired evening and a half-empty fridge. I opened it, saw the rest of the cottage cheese, a couple of apples, and some butter. And instead of ordering something, I decided to try making something myself.
I mixed the ingredients completely at random, without even weighing them. I just cut up the apples, added sugar, mixed with the cottage cheese, and stuffed it all into a mold I found in the bottom drawer of the cabinet. To be honest, when I put the pan in the oven, I was sure that in half an hour I would throw everything away and order a pizza. But after a while, the whole apartment began to smell as if I had a small pastry shop.
When the pie was ready, I tried a small piece and... honestly, I started laughing. Because it turned out so delicious, as if I had been training for three days. And this feeling - as if chance decided to give me a gift - has become my favorite. I did not remember the exact recipe. And I do not try to repeat it exactly. Every time I do it my own way. Sometimes I take pears instead of apples, sometimes I add a little vanilla. The pie turns out different every time, but every time it is delicious.
Now I have a small tradition - when I want warmth, I do not buy dessert, but just mix what I have. And every time it turns into a moment that gives comfort. Perhaps the most delicious thing about this pie is not even the taste itself, but the fact that it has spontaneity. We are used to doing everything according to the rules: if a recipe, then it is precise, if a plan, then it is detailed. But sometimes the best things come from chaos. And if there had been enough products in the refrigerator back then, I certainly would not have come up with my pie. So now, when I have half a banana or a lonely pear left, I smile and think: “Great. There will be a new pie.”
