A recipe that occupies a special place in my heart and in my kitchen. This apple and pear charlotte is tender, aromatic, with a golden crust and a melting center... Just a little miracle 🥰
🍎 Apples - 2 pcs. 🍐 Pears - 2 pcs. 🥚 Eggs - 3 pcs. 🧂 A pinch of salt. 🥄 Sugar - 150 g. 🌾 Flour - 150 g. 🧈 Butter - 40 . 🌿 Cinnamon - to taste (optional). 🍋 A little lemon juice
Preparing the fruit 🍎🍐
Wash the apples and pears, peel and core them, and cut into thin slices. Sprinkle with lemon juice to prevent them from darkening.
Kneading the dough 🥣
Whisk the eggs with sugar and a pinch of salt until fluffy and light. Carefully sift the flour and stir it into the egg mixture. You should get an airy, slightly viscous dough.
Forming the charlotte 🧡
Grease the mold with butter and put some of the fruit on the bottom. Pour half of the dough on top, then put the fruit back on top and add the remaining dough. A light sprinkling of cinnamon will add an incredible aroma.
Bake 🔥
Put the pan in the oven preheated to 180°C and bake for about 35–40 minutes. Check the readiness with a wooden skewer — if it’s dry, the charlotte is ready.
Decorate and serve 🌸
Cool the charlotte, sprinkle with powdered sugar, decorate with slices of fresh pear or apple. It’s best to serve warm, with a scoop of vanilla ice cream or a spoonful of smooth yogurt.
