Translated from Japanese, "umami" means "delicious taste" or "pleasant spicy taste." Why do so many people like hot dog with ketchup and mustard, chips or pasta bolognese? Because the piquancy of a dish increases when different ingredients are combined with the umami flavor. Evolutionarily, people avoid bitter-tasting foods so as not to get poisoned.
