My favorite Olivier salad

First of all, I love the great combination of ingredients in this dish. There is sausage, eggs, pickles, potatoes, carrots and, of course, sweet green peas. The composition is complemented by aromatic mayonnaise and fresh herbs. However, sometimes I prepare a dietary version of this salad, adding chicken breast instead of sausage, and replacing mayonnaise with sour cream. But this Olivier also has a delicious taste.

The presence of Olivier on the table is always associated with the holiday, since it is customary to prepare such a salad for the New Year. Not a single birthday in our family is complete without this dish. Therefore, even when sometimes we eat Olivier just like that, my mood still rises and I feel a slight thrill in my soul, as it usually happens before the upcoming celebration.

There is nothing tastier than homemade Olivier. I always know which peas or cucumbers should be bought at the store to make the dish perfect. I am very responsible in my choice of mayonnaise and sausage, trying to find products with a natural composition and the lowest fat content.
So, we usually cut potatoes and carrots into small cubes, and, on the contrary, I put meat or sausages in large slices in a salad bowl. I like it so much!

When the Olivier is completely ready, all that remains is to decorate it with fresh herbs and a grated egg, and then the dish can be served.
